I modified this from my Joy of Cooking:
Serves 2 (could serve more or you could have leftovers - me & DBF are hungry Saturday morning people )5 points per serving - I put in WW recipe builder 2 large eggs 1/4 cup flour 1 cup ff sour cream or ff plain yogurt (which I use because I think ff sour cream is ) ![]() 1 Tbsp. sugar 1/4 tsp. baking soda 1/8 tsp. salt Optional: Fresh or frozen blueberries, strawberries or any other fruit you prefer (if frozen defrost) Beat eggs with whisk in a bowl, then whisk in all remaining ingredients. Spray a griddle (or frying pan) with cooking spray. Pour or spoon onto griddle, either make silver dollar size or big pancakes. Sometimes I mix in the fruit with the batter, sometimes I put a few blueberries/fruit on top of the pancakes as they cook. Wait for the bubbles to burst, flip over and brown other side, keep warm while you make the rest. Serve with more fruit, all fruit jam or pure maple syprup (only) for points. If made with the yogurt the batter is thinner than other pancake batters, but just as delicious.

You could thicken up the batter by using the Greek-style FF yogurt. I never use FF sour cream any more since I've discovered the Greek-style yogurt (I agree with you that it's yucky). |
