Default Biscuit Muffins

Sausage Egg and Cheese Biscuit Muffins (photo on website)

Serves - 10
Points - 2

Ingredients:
6 oz. Jimmy Dean 50% Less Fat Pork Sausage
7.5 oz. can Pillsbury Buttermilk Biscuits
1/2 cup egg substitute
1/4 cup fat free shredded Cheddar cheese

Directions:
Preheat oven to 350º.

Crumble and cook sausage in a skillet until browned.

Spray a 12 cup muffin tin with non-stick cooking spray. Line muffin cups with biscuits, pressing up sides to cover.

Evenly divide sausage between muffin cups. Pour egg substitute over sausage, dividing evenly among muffin cups. Sprinkle each with Cheddar cheese.

Bake in preheated oven for about 20 minutes or until biscuits are done. Serve immediately.

106 cal., 4 g. fat, 0.3 g. fiber

I tried a similar recipe, but instead of the sausage I used Morningstar Farms Meal starters "meat" (soy) crumbles. I heated one serving of those in a skillet with a little onion and distributed them evenly in muffin pans lined with 1-point pilsbury biscuits. I used 1/2 cup egg beaters with a shot or two of hot sauce. Then mixed a 1/4 cup ff cheddar and 1/4 cup regular cheddar together and sprinkled on top of each muffin. Bake for 20 minutes at 350.

My calculations came out to 1 point each! I had three of them for a hot, satisfying 3-point breakfast. You could probably freeze them and pop them in the microwave during the week for an on-the-go breakfast or snack.

Other variations I may try:
Adding any or all of the following:
green pepper, celery, a little shredded potato, rotel tomatoes & chilis, maybe even some broccoli. Adding chicken would also be good, but would increase the points.

This looks like a great recipe I got out of a Freezer cooking book. I'm currently weading through all these recipes trying to put together a Freezer friendly low point notebook of recipes for myself. With 5 other people in the house, I HAVE to have a bunch of microwave meals on hand and these Smart Ones are killing my grocery budget!!
