I got this from my grandmother's favorite cookbook. They turned out great - very light but at the same time super filling. I didn't add raisins to mine.
1/2 c. Unprocessed Wheat Bran 1 c.Whole Wheat Flour 1 tsp. Baking soda 2 tsp. Baking Powder 3/4 c. Buttermilk 1/2 c. Molasses 2 tbsp. Oil 1 egg, beaten Stir together the bran, flour, baking soda and baking powder; set aside. Blend buttermilk, molasses, oil, and egg; att to dry ingredients and stir until moistened. Filled oiled muffin cups 2/3 full. Baking 15-20 minutes in a prehreated 400 degree oven. Makes 12 muffins, 2 points each. |
