Spinach Corn Muffins

These are SO Good..


Microwave one 10-oz pkg. frozen chopped spinach per package
instructions. Drain off excess water. Prepare batter from two 5.7-oz
boxes fat-free corn muffin mix per package directions. Stir cooked
spinach into muffin batter. Divide among 12 muffin cups sprayed with
nonstick spray. Bake per package directions. Per muffin: 99 calories,
no fat.

Julie, this was sounding sooooo good I had to try it.

Yummie. I added 1/2 c shredded FF cheddar at the last minute before pouring out the batter into pan. Even my teens loved it! Thanks so much for sharing.
