CORN BREAD -------------------------------------------------------------------------------- Being a corn bread lover...I created this recipe over time...thought I'd share it with CORN BREAD lovers. I love to make it and cut it into 12 squares...then I freeze them individually in sandwich bags or two squares per bag till frozen so they won't crumble. Then I place all the bags in one large freezer bag so they don't get buried in freezer. Then when I want a square for breakfast or lunch I can pull one out...it defrosts quickly or put in microwave on defrost enjoying it with coffee, lunch or for snack. Hope you enjoy! CORN BREAD 1 cup cornmeal 8 pts 1 cup white flour, sifted 5 pts. 1/2 cup skim milk .5 pts. 1 egg 2 pts. 6 packets of Sweet n Low 0 pts. 3 tsp. baking soda 0 pts. 1 tsp. salt 0 pts 1/4 cup Can't Believe It's Not Butter 12 pts. Use non stick pan or spray with butter..or both Mix by hand all ingredients...bake in 8x8 square (I use my toaster oven) on 400 degrees for 20 minutes. With cake tester check to make sure its done. Cool on cooling rack...then when cool turn over gently to remove from pan...place on flat surface and cut into 12 even pieces. TOTAL PTS. - 27.5 pts .... divided by 12 = 2.5 pts. per piece
