Grits Casserole (4 pts) -------------------------------------------------------------------------------- Serves 8, nice sized servings. Each serving is about 4 and 1/3 pts. I just round down to 4 pts. Grits Casserole 4 cups cooked grits (12 pts) 4 oz lite sharp chedder cheese (8 pts) 4 oz egg substitute (2 pts) 1 cup buttermilk (2 pts) 3 slices Pepperidge Farm Health Nut bread (6 pts) 10 slices center cut bacon, cooked (5 pts) Fry bacon and drain. Chop cheese and bacon in food processor. Add egg substitute and milk and pulse until mixed. Pour into bowl and add grits. Mix well. Layer bread on bottom of casserole dish and pour grits mixture over top. Bake at 350 for 1 hour then 400 another 30 minutes or until mixture is firm.
