Hi All W/W ers I made these last week and wanted to share the recipe, they were good and I have a few other muffin recipes to share. Blessings Jane

FRUITFUL RHUBARB MUFFINS

Amount Measure Ingredient -- Preparation Method

1 cup w/w flour king arthur
1/2 cup w/w flour king arthur
1/3 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup oat bran
1 large banana -- mashed
1 teaspoon vanilla
1 cup rhubarb -- chopped fine
1 cup mixed berry juice trop. light or any juice thats about 65 cals. / 10 fl oz.

mix dry ingredients togeather then add wet and mix till moistened bake 3650 for approx. 22 mins. till toothpick is clean. store in refrigerator for a few days then freezer. 1 point each or 2 for 2 points

BROWN SUGAR BANANA MUFFINS

2 cups whole wheat flour
1/3 cup brown sugar
1 tablespoon baking powder
1 cup bananas -- mashed - 2 large
1/3 cup milk, skim
1 teaspoon vanilla
1/4 cup Egg Beaters® 99% egg substitute
1 tablespoon brown sugar -- topping
1 tablespoon oatmeal or wheat germ -- topping

mix topping ingredients set aside

combine dry ingredients and mix well, add wet ingredients and stir just till moistened

coat muffin tins with spray and fill 3/4 full sprinkle topping over evenly

bake 350 for 14-16 minutes test with toothpick till comes out clean allow to sit in pan 5 mins before turning out

serves 12 muffins 2 points @ serving freezes well

OAT BRAN MUFFINS UNIVERSAL

1 3/4 cups oat bran
1/2 cup flour, whole-grain wheat -- or white
1/4 cup sugar, brown
1 tablespoon baking powder
1 teaspoon cinnamon
1 cup milk, skim -- use low/fat buttermilk same pts

1/2 cup applesauce, unsweetened
1/2 cup raisins
1 cup blueberries, frozen -- bananas or pumpkin also may be used 1 cup
1/2 cup Egg Beaters® 99% egg substitute


Combine dry ingredients set aside. mix wet ingredients and add to dry mixing only till moistened , then add raisins & banan
Sray muffin tins sprinkle with cinnamon & splenda if desired bake 20-25 mins. at 425
each muffin is 2 points or 2 for 4 points.when using bananas or 3 points for 8 loafs (1 each)

1 pt for 1 muffin or 3 1/2 pt for 2 muffins when using pumpkin ( 2 points loaf @ 8 serv )

1 pt for 1 muffin @ 12 sev. or 3 1/2 pts for 2 muffins ( or a large muffin) 2 pts loaf @ 8 serv. when using the blueberries
