Hi!
Just wanted to share a recipe I created. I was buying the Nutri Grain Muffin bars and figured I could come up with something similar (only cheaper) I eat one of these every morning with a 1 pt fruit. They are moist & chewy and really filling. I usually cut them into 12 squares then wrap each one in platic wrap, put in a zipper bag and store in fridge. They also freeze well. Hope you like them!

Apple-Oatmeal Muffin Bars
2 pts each

1 Box Duncan Hines All Bran Apple Cinnamon Muffin Mix
1/4 c. raisins
1 c. oatmeal (not instant)
1 2-1/2oz jar prune baby food
1 c. lowfat milk

Mix dry packet from muffin mix and oatmeal in large bowl. Stir in raisins, milk, prunes and packet of apples from muffin mix. Mixture will be thick. Spread in a 9x13" pan that has been sprayed with Pam. Bake at 400 degrees for 20 minutes. Cool completely. Cut into 12 equal squares.

This sounds like a great recipe..Can I clarify how many jars of prune baby food is needed? I'm reading it as 12 (1/2 oz. each)jars. Am I reading this correctly? I make an apricot muffin using the jars of apricot baby food that is delicious. Haven't made it for a long time, will have to find the recipe and post here.

I read this as one 2.5oz jar, not twelve 0.5oz jars.

I'm trying to refigure this recipe to make from scratch w/wheat flour instead of the mix. I need to know is the muffin mix for 6 muffins or 12?
