Special Brunch Bake -- 3 pts -------------------------------------------------------------------------------- 1 tube (7.5 oz) refrigerated buttermilk biscuits 24 oz. egg substitute, thawed 7 oz canadian bacon, chopped 1 cup (4 oz.) shredded reduced fat cheddar 1 cup (4 oz) shredded reduced fat mozzarella 1/2 cup chopped fresh mushrooms (I substituted canned) 1/2 cup finely chopped onion (I used less and precooked in microwave) 1/4 tsp pepper Arrange biscuits in a 9x13" baking dish coated with nonstick spray. In a bowl, combine the remaining ingredients and pour over biscuits. Bake, uncovered at 350 degrees for 30-35 mins or until a knife inserted in the center comes out clean. Serves 12 -- One serving (1 biscuit section) = 160 calories, 5 g fat, 20 mg cholesterol, 616 mg sodium, 13 g carb, 1 g fiber, 15 g protein. Diabetic exchanges: 2 lean meat, 1 starch I served these at a brunch with orange cranberry nut bread, and raspberry/yogurt smoothies. YUM! Tipper Ü
