Angel Food Cake Pineapple Muffins -------------------------------------------------------------------------------- By: Elizabeth POINTS per Muffin -( reg. sized) 2 Points each. * if making mini muffins, they're 1 point each ------- -1 box angel food cake mix -1 can of light crushed pineapple ( DO NOT DRAIN!!!) Mix Together well. Pour into a lined muffin tin. Bake According to Cake Box Directions. Hope you enjoy these! They Freeze WELL!!

What size is the can of crushed pineapple used in this recipe? Try adding a capful of coconut extract and it's taste like a Pina colada cupcake.

Do you mix all the other stuff in the cake mix, that it calls fr on box, or just use the dry mix, lus the pineappkle, and also what size can of pineapple? Thanks

These sound yummy! I can picture them as a base to a strawberry shortcake (with splenda type syrup for strawberries...). How would I do this?

Just the angel food cake mix and a 20 ounce can of pineapple NOT DRAINED!
That's all you need to make this wonderful cake. It's one of my favorites, behind the cake mix and pie filling cakes. Hope this helps! diana

You can also make this in a 13x9 cake pan, I garnish each piece with fresh strawberries and a little light cool whip
It is three points for each piece and of course extra for the cool whip.KathyK |

These were great.. made them for a quick Sunday Dinner dessert with the in-laws. They were a hit. Thanks. Just the right amount of sweetness with our coffee. |

When I make these, I whirl the crushed pineapple in the blender until smooth and then continue with the directions. Whirling the pineapple gives a more cake like finished product; a much better finished product. HTH

A typical box of cake mix will yield 24 cupcakes, so my guess would be that this makes 24 "muffins". Keep in mind that there are different size cupcake/muffin tins out there and if you own the larger size tins OR you tend to fill up the tin with batter, you will get less than 24.
And altho I haven't done this myself, I hear these freeze fine.
