Low Fat Pumpkin Bread

Here is a yummy recipe that is about 2 pts per slice. I like to add the nuts and raisins, so I figure it at 3 pts!

Low fat Pumpkin Bread
Makes 2 loaves -- 14 slices each

2 cups sugar
15 oz can pumpkin
1 cup unsweetened applesauce
1/2 cup egg substitute (I used 1 egg, 2 whites)
3 1/3 cup flour
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg (or allspice)
OPTIONAL - 1 cup nuts and/or raisins

Mix sugar, pumpkin, applesauce, eggs in large bowl. Blend in all dry ingredients until fully mixed. Stir in nuts and raisins if desired. Pour into 2 Pam sprayed loaf pans and bake at 350 degrees 55-60 mins. Cool for 10 mins, then cool on racks.

One slice without nuts or raisins --
122 cals
trace fat
1 g fiber
