Chocolate Pumpkin Muffins

Amount Measure Ingredient -- Preparation Method

1 package Betty Crocker® SuperMoist milk chocolate cake mix
1 can Libby's 100% pure pumpkin, canned -- 15 oz.
1/2 cup water

Mix together cake mix and pumpkin. Add water as needed to create a smooth batter. Note - this will be thicker than
typical cake batter.

Line a muffin pan with paper liners or spray will a non-stick cooking spray. Fill cups 2/3 full. Bake at 350ºF for 18-23
minutes or until a cake tester inserted into the center of the muffin comes out clean.

Per muffin: 91 calories, 2g fat (1g sat. fat), 1g fiber, 18g carbohydrates, 146mg sodium

US Points: 1.8
UK Points: 1.6

Yield:
"1 muffin"

I just made these muffins today to take to work tomorrow for my co-worker's surprise wedding shower. OMG!!! These muffins are amazing. I highly recommend them. They taste like they should be worth more than 2 points each. Thanks for posting this recipe!

I was a bit skeptical mixing these up, but man, did they turn out great! Very moist, very dense. Rather filling for a 2 pt treat! I highly recommend these! Thanks for the recipe!

There is nooo way these guys are only TWO points, they're so goood! Rather than the Betty Crocker mix though, I used a reduced sugar cake mix :] Thanks for the great recipe!!!

Something new caught my eye with these.

I recently bought the Hungry Girl recipe book and this recipe was in there. It reads...

Ingredients :
1 box of devils food cake mix [about 18 oz]
One 15 oz can pure pumpkin.

Same deal; mix the two, bake for 20 minutes.

Each muffin though; 181 cal, 3.5 fat, 357 sodium, 37 carbs, 2 fiber, 20 sugar, 2 protein.

Help? gah o_O;;

They sound delicious. My ww leader gave us a very similar recipe at our last meeting: One can of Libby's pumpkin and one box of spice cake (same baking instructions as the chocolate pumpkin). They came out awesome. I can't wait to try it w/chocolate!

A typical box of cake mix will yield 24 cupcakes, so my guess would be that this makes 24 "muffins". Keep in mind that there are different size cupcake/muffin tins out there and if you own the larger size tins OR you tend to fill up the tin with batter, you will get less than 24.

I made these yesterday and they are heavenly!! I didn't have muffin liners and my pan is rusty, so I baked in a cake pan, then cut into 24 squares. It didn't cut very well, but still yummy!

I made these too. Not a fan. I brought the rest to work, they loved them. I guess pumpkin and choc don't agree with my taste buds

I made these and they were awesome.

I used the nutritional info on the side of the box which shows 12 servings. I added the nutritional info for the box of cake mix, plus the nutritional info for the can of pumpkin and divided it by 12. I made 12 muffins. It came out to 3points per muffin. If you make 24 muffins then it is 1.8 or something like that so round up to 2 points per muffin.

I did not use any water in mine. They were so good. I am definately going to make these again. Even my very picky hisband thought they were great!

For anyone that is hesitant to try these because of the pumpkin, don't be! You can't even taste it! I plan on tinkering with the recipe some... subbing more pumpkin for the cake mix because I LOVE pumpkin!

Danielle, let me know if your tinkering works as I also love pumpkin. I wonder if the pumpkin flavor would be more flavorful if a white cake mix was used plus more pumpkin.
