Re: MUFFINS ANYONE? -------------------------------------------------------------------------------- I made these this morning and think they are better than the 2.5 pt. black bean brownies. I copied it from the WW message board some time ago. Good luck. Chocolate Kashi Muffins 1 pt.!! These muffins are great warmed in micro. for 10 sec. or so. I use a dollop of fat-free whip topping and its great! Also for a filling 3 pt. desert I'll add 1/2 C. fat-free frozen yogurt and f.f whip-toping!! These are just great anyway you serve them! Add following to a bowl and mix together: 2 1/4 C. Kashi Good Friends Cereal 1 C. skim milk 4 pkts. Sweet N'Low 1/4 C. sugar 1/4 C. egg substitute 1/2 C. unsweetened applesauce 3/4 C. pumpkin 2 tsp. vanilla 1 dash salt Mix following in second bowl: 3/4 C. whole wheat flour 2 tsp. baking powder 1 tsp. baking soda 1/3 C. baking cocoa 3 Tbsp. mini. choc-chips Mix second bowl into first. Do not overstir!! Spray muffin pan with nonstick spray. Fill each cup evenly (will fill almost to top) Bake 20 min. 350 F. It is actually simple cupcake recipe but I figure with the fruit it could be good for breakfast AND ONLY 1 point each. 1 box of ONE STEP Angel Food cake mix 1 can of pie filling of your choice Mix together these 2 things and pour into cupcake papers and bake. Remember it has to be a one step. Can you believe it is that simple? These would be great with a dob of Low Fat Cool Whip also. This recipe makes about 30+ cupcakes. We got this recipe at a meeting and when I made it (with unsweetened, crushed pineapple) it was very good, but I made it in a 9x13 pan and cut it into 10 generous pieces for 4 points each. To cut each piece into 3 pieces would make them pretty small. I did use the lite cherry pie filling but I figured it out and if you made 30 it would still be 1 point. Maybe it is the cherries that add the extra bulk to get 30 but the point count at 24 still isnt bad. I would count 3 points for 2 cupcakes then. At any rate they are great!!! Wish I could remember who so I could give credit for it. They're delicious. 1 box of chocolate cake mix (Mine was Betty Crocker Supermoist) 1 15oz can of pumpkin That's it! Mix together. Batter will be very thick. You can add some water if you want to thin it a "little". Bake in 12 cupcake tins with paper for approximately 20-25 minutes. Taste like a big brownie cup. 3 points a piece. Points would maybe be lower if you can find the snackwells or red. fat cake mixes. My store don't carry them. In the ad there is a muffin recipe for Friendly Fiber Muffins. The point count is 1 pt.or if you really are technical you could say 1 1/2 pts. 100 Cal 3 g fiber and .2g fat. That is correct point 2 grams of fat. You can find the recipe if you will click on kashi.com and go to recipes and then muffins. It is Friendly Fiber Muffins. They sound good to me and I will try them soon. In the ad it says to send them a postcard with your name and address for a coupon, recipe and more. Well, I just got Cooking Light 6.0 and input the exact same list of ingredients and got this nutrition output: Per Serving (excluding unknown items): 111 Calories; 2g Fat (21.3% calories from fat); 3g Protein; 17g Carbohydrate; 4g Dietary Fiber; trace Cholesterol; 232mg Sodium. Exchanges: 1/2 Grain(Starch); 0 Lean Meat; 0 Fruit; 0 Non-Fat Milk; 1/2 Fat; 1/2 Other Carbohydrates. Well this calculates to 2 points not 1. I was just passing info. along and hope I did not mislead anyone. I do not know how they got 103 cal. per. Besides, that makes them 1.5 points per!!!
