Picante Corn Bread Muffins--2 points each

sorry, I must have hit the wrong button. Here's the recipe again, hopefully in one post.

PICANTE CORN BREAD MUFFINS

1 1/2 cups yellow cornmeal
1 tsp. baking soda
1 tsp. sugar
1/2 tsp. salt
1/4 cup picante sauce
3 TBL. oil
1 (8-ounce) carton plain fat-free yogurt
2 large egg whites
Cooking spray

1. Preheat oven to 425 degrees.
2. Combine first 4 ingredients in a large bowl; stir well.
Make a well in center of mixture. Combine picante sauce
and next 3 ingredients; stir well. Add to cornmeal
mixture, stirring just until moist.
3. Divide batter evenly among muffin cups coated with
cooking spray. Bake at 425 degrees for 18 minutes or
until golden. Remove from pans immediately.

Yield 1 dozen muffins.
Serving size 1 muffin

Cal--102 Fat--4g Fiber--1.7

Note: I use a 1/4 cup measuring cup to divided batter. Usually works out just right.
