Corn Bread -------------------------------------------------------------------------------- From W W New Complete Cookbook Makes 12 servings 2 pts each 1 1/4 c yellow cornmeal 3/4 c all purpose flour 4 tsp. sugar 2 1/2 tsp. baking powder 1/2 tsp. salt 1 cup + 2 tabl. low fat buttermilk 1 egg Preheat oven 400 degrees. Spray an 8" square pan or 12 cup muffin tin with nonstick cooking spray. In a large bowl, combine the dry ingredients. In a small bowl, beat the buttermilk and egg Pour over the flour mixture, stir until blended (do not overmix) Transfer to the pan, Bake until golden brown and a toothpick comes out clean, 20 - 25 min. Cool in the pan or on a rack for 10 min. Serve warm. Per Serv. 100 Cal. 1 g fat 1 g fiber 2 pts per serving These were very good but maybe a tad dry. Maybe I over beat them or they could use another tabl. of buttermilk. Don't forget you can buy powdered buttermilk (Saco brand ) in the grocery baking dept. No left overs to spoil.
