Whole-Grain Pan Rolls -------------------------------------------------------------------------------- Whole-Grain Pan Rolls 1 c. water ¼ c. honey ¼ c. butter ¾ c. whole-wheat flour ½ c. regular oats 1 t. salt 2 packages dry yeast 1 large egg 2 ¼ to 2½ cups all-purpose flour Cooking spray Combine first 3 ingredients in a small saucepan. Place over medium heat, and cook until butter melts. Remove from heat; let mixture cool to 120 to 130 degrees. Combine whole-wheat flour, oats, salt, and yeast in a large bowl; stir well. Gradually add hot butter mixture; beat at low speed of a heavy-duty stand mixer 1 minute. Add egg; beat at medium speed of mixer 2 minutes. Gradually add enough all-purpose flour to form soft dough. Turn dough out onto a floured surface; knead until smooth and elastic (about 8 minutes). Divide dough into 24 equal portions, shaping each portion into a ball; place in a 13 x 9 inch baking pan coated with cooking spray. Cover and let rise in a warm place (85 degrees), free from drafts, 1 hour or until doubled in bulk. Preheat oven to 375 degrees. Bake rolls at 375 degrees for 20 minutes or until lightly browned. Makes 2 dozen (1 roll per serving) 2 points.
