Default Whole Grain Blueberry Pancakes

Whole grain blueberry pancakes

3/4 cup oatmeal
1/2 cup flour
3/4 whole wheat flour( I used whole wheat pastry flour)
1/4 cup wheat bran
3 tablespoons baking powder
1 tablespoon melted butter (I used Imperial Light margarine)
2 tablespoons honey (2 tablespoons splenda)
3 eggs (3/4 cup egg substitute)
1 3/4 cup skim milk
2 cups blueberries, fresh or frozen

In blender or food processor process oatmeal unti it resembles coarse flour. In a large mixing bowl, combine the oatmeal, flours, bran and baking powder and splenda; stir to mix. In another bowl combine melted butter, milk, egg substitute. Stir the milk mix into the dry ingredients until moistened. Stir the blueberries into batter. (My batter came out thicker than I like so I added 1/2 cup more of milk) Heat griddle over medium heat after spraying with cooking spray. Pour batter on griddle using 1/4 cup measure. Cook until bubbles form on top of pancake, turn and cook the other side. I got 24 pancakes at 61 calories, 1gram fat, 4grams fiber or 1 point per pancake.
