Chocolate-Chocolate Chip Banana Surprise Muffin -------------------------------------------------------------------------------- * Exported from MasterCook * Chocolate-Chocolate Chip Banana Surprise Muffin..3 Points Recipe By : Carol{spinoff from another muffin recipe} Serving Size : 12 Preparation Time :0:00 Categories : Muffins Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups all-purpose flour 3/4 cup splenda 1/4 cup unsweetened cocoa 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda -- plus 1/2 tsp. salt 4 small bananas -- mashed well 1 large egg -- beaten 2 tablespoons light butter -- melted 1/4 cup 1% light buttermilk Filling 4 ounces light cream cheese -- or fat free 2 tablespoons Splenda 2 tablespoons miniature chocolate chips 1/2 teaspoon vanilla Preheat oven to 375 degrees. Spray a 12-hole muffin pan withPam cooking spray or line with cupcake liners. In a large bowl, combine flour, splenda, cocoa, baking powder, baking soda & salt. In a small bowl, combine bananas, egg, melted light butter, and buttermilk. Add banana mixture to flour/cocoa mixture. Fold gently to combine, making sure all flour is incorporated but don't overmix. Beat filling ingredients well,stir in the chocolate chips; set aside. Evenly spoon 1/2 the batter into prepared muffin wells. Divide the cream cheese filling among the 12 muffins. Top each with remaining batter. Bake for 15 to 20 minutes or until a toothpick inserted in center comes out clean. Place muffin pan on a wire rack and cool for 5 minutes. Remove from pan and finish cooling on wire rack. store in a covered container in the fridge.Will freeze well. 12 muffins @ 143.13 calories,5 grams fat, 1.3 grams fiber,30.3% calories from fat, WW Points: 3{rounded to Whole Points}
