Whole Wheat Blueberry Pancakes

Okay my 16 yo DS just scarfed these. A sure sign of yummyness!

Whole Wheat Blueberry Pancakes

1 cup whole wheat flour (I used nutrition from Gold Medal) 8 pts
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Mix dry ingredients together.

1/2 cup frozen blueberries, not defrosted (fresh could be used) .5 pt

Gently stir frozen blueberries into dry ingredients.

2 egg whites .5 pt
1 1/2 cups buttermilk 3 pts.

Add egg whites and buttermilk and stir until incorporated.

Spray griddle or pan with Pam and use 2 rounded tablespoons for each pancake.

The whole recipe is 12 points.

Edit~I forgot to add my tip. If you 'assembly line' some ziplock bags, you can add all the dry ingredients to make your own mix.

Let's say you want to do 5 bags ahead of time, add the 1 cup flour to each bag, then the next ingredient to each bag. (As opposed to adding each ingredient to each bag). This goes fast and if you write on the bag what's left to go into the recipe, it will be a cinch to make pancakes next time. What I prefer to do is to put smaller filled bags into a larger bag. That way I only have to write the instructions once on the larger bag.
