Quiche Eggs 3pts!! -------------------------------------------------------------------------------- I can't stand plain old eggs!! So I came up with a healthier alternative to my favorite cheese eggs. 1 egg (2pts) 1 egg white (0pts) 1/2 tsp to 1 tsp of water (0pts) 1/2 slice of regular cheese (1pt) (american or swiss) 1 tsp of imitation bacon bits (0pts) 1/4 cup (roughly) of your favorite veggies (like zucchini, mushrooms, tomatoes, broccoli, etc) (0pts) onion powder salt pepper non-stick spray Whisk whole egg, egg white and water together. Add two dashes of onion powder- which works out to about 1/8 -1/4 of a tsp depending on personal taste, a few dashes of pepper, a dash or two of salt. Whisk again and add bacon bits. Rip the cheese into small bits and add to the eggs. (Sometimes I use a Laughing Cow wedge- also very good.) Toss in veggies and whisk one last time. Spray your pan and on med-high heat cook the mixture. I like to scramble them, but I guess you could cook it like an omlet. I eat this with a banana and a large class of water for a total of 5pts. It's very filling and low on carbs. Feel free to check me on points, but I think I got them all right. Let me know what you think!!!
