Baked Oatmeal Recipes -------------------------------------------------------------------------------- Copied from Tips forum... Baked Oatmeal 4 servings / 3.5 points 3 points a serving if you leave the raisins out. I cut it into 4 servings if it's to be a breakfast, and 8 servings if it's to be a snack. Can be made in muffin tins too. Freezes well. 2 cups quick oats 1 1/2 tsp. baking powder 1/2 tsp. salt 1 cup buttermilk (or sour milk or even regular milk) 1/2 cup egg beaters 1/2 cup pumpkin (or can use unsweetened applesauce) 1/4 cup raisins 1 tsp vanilla 1 tsp. pumpkin pie spice (or cinnamon if using applesauce) Preheat oven to 325. Combine liquid ingredients. Add dry ingredients. Stir until just combined. Pour into prepared 8 x 8 pan (or pie pan - I like the pie pan). Bake for 30 minutes. Let cool and cut into servings. OR (my personal favorite....) Baked Oatmeal With Chunky Applesauce Serves: 8 / 3 points This turns into a cake of sorts, very moist, and delicious. 3 cups oatmeal 2 tsp. baking powder 1/2 tsp. cinnamon 1/2 tsp. salt 1 tsp. vanilla 3 tablespoons sugar 1 cup of chunky applesauce ˝ cup egg beaters 1 cup of water Preheat oven to 350 degrees F. Mix ingredients together. Lightly spray 9x9 pan with nonstick Spray, spread ingredients in pan. Bake 20-30 minutes.
