Default Fruit Pancakes

Fruit pancakes

I used the Hungry Jack Light and fluffy mix 3-4oz pancakes for 3 pts (1/3 cup before mixed - 2/3 cup after mixed). I mixed this up normal. I took 3 apple wedges (less than a half apple) and diced them - then put on a plate and microwaved for 2 minutes to soften. I then poured the batter (made 3 pancakes) in to a pan sprayed with butter flavored spray. I sprinkled a few apple pieces on top of the pancake batter. Flip as normal and finish cooking. I don't care for the sf syrup so I used about 1 1/2 tsp of sf strawberry preserves for my topping - I think I could have eaten it without the preserves! It was awesome!!

I counted for 3.5 for pancakes and .5 for preserves. Very YUM! And filing!!!

And you could use ANY fruit - banana, strawberry, pear, kiwi....anything!
