Default Egg "Mock" Muffins

Egg Mock-Muffins

I saw the following recipe on Cooking Thin on the food network this weekend and gave it a try this morning. If you want an Egg McMuffing substitute with a little over half the points, it is great!

1 English Muffin (I used a whole wheat by Thomas') - 2.2 pts.
1 Slice Canadian Bacon - 1.8 pts.
1/4 Egg Substitute - 0.6 pts.

4.4 points total

Place the canadian bacon in the bottom of a custard cup (one large enough for the bacon to lay flat) sprayed with cooking spray. Pour the egg substitute over the bacon. Cover the contain LIGHTLY (unless you want an explosion of egg in the microwave) with plastic wrap. Microwave on high for 1 minute. Remove from the microwave, stir the eggs, re-cover and place back in the microwave for 30 seconds more. Wifey and I toasted the english muffin and then put about a tsp. of Brummel & Brown on them.

You can add cheese for another point or two, but it was absolutely wonderful without it!
