Pumpkin Pancakes (single serving)

1/2 cup Bisquick Reduced-Fat Baking Mix
1 Tbsp Egg Beaters
3 oz fat-free skim milk
1/3 cup canned pumpkin
1/4 tsp pumpkin pie spice (or to taste)
2 packets Splenda
Mix all ingredients thoroughly in a large bowl Pour small amounts of the batter (approx. 1/4 cup) onto a hot griddle or frying pan sprayed with nonstick cooking spray over medium-high heat. When bubbles form on the pancakes and the edges begin to brown, flip the pancakes.
This makes about four 4-5" pancakes.

I topped mine with 1/4 cup FF Reddi-Whip (10 calories), a bit of cinnamon, and some SF syrup (25 calories) that I added after the picture was taken.
