Chocolate Kashi Muffins 1 pt.!!
These muffins are great warmed in micro. for 10 sec. or so. I use a dollop of fat-free whip topping and its great! Also for a
filling 3 pt. desert I'll add 1/2 C. fat-free frozen yogurt and f.f whip-toping!! These are just great anyway you serve them!
Add following to a bowl and mix together:
2 1/4 C. Kashi Good Friends Cereal
1 C. skim milk
4 pkts. Sweet N'Low
1/4 C. sugar
1/4 C. egg substitute
1/2 C. unsweetened applesauce
3/4 C. pumpkin
2 tsp. vanilla
1 dash salt
Mix following in second bowl:
3/4 C. whole wheat flour
2 tsp. baking powder
1 tsp. baking soda
1/3 C. baking cocoa
3 Tbsp. mini. choc-chips
Mix second bowl into first. Do not overstir!! Spray muffin pan with nonstick spray. Fill each cup evenly (will fill almost
to top) Bake 20 min. 350 F. Makes 12 muffins, 1 pt. each!! 103 Cal., 4g Fiber, 2g Fat)

The question about mashing up the kashi was never answered, and so I decided to simply forge ahead. I made these this afternoon, and I didn't mash the kashi up. Frankly, I don't think that there is a way to mash kashi up! LOL. This makes a heavy, decadent, and moist muffin, and it's a big muffin. I didn't vary the recipe in any way, which is most unusal for me. My DH and I will be enjoying these great muffins many times in the future. Thanks for the great recipe!!

Do you know what the quantity of 4 packets of Sweet and Low is? I have a box of Splenda and would like to substitute that for the Sweet and Low if possible.
They sound delish!

I have a packet of Sweet and Low also. In the fine print it says it is equal to the sweetness of 2 teaspoons of sugar.
One teaspoon of Splenda equals one teaspoon of sugar.

I tried them tonight and mine came out really bitter tasting...has anyone else had this problem? I substituted Splenda for Sweet & Low...but didn't change anythign else. What did I do wrong (or are they always a little bitter)???

loved these but did the math with my own ingredients and discovered the cause of my maintaining for a week after eating many
I found them to be 110 cal 2.5 fat and 4.6 fiber each - 2 pt
if all splenda is used then 94.5 cal 2.5 fat 4.6 fiber each - 1 pt
have not yet tried with all splenda, but that is my next course of action. also, when weighing 90 grms of kashi - 3 servings on the box (2 1/4 cups supposedly) is 1/2 cup less - only about 1 3/4 cups.
who knows. if they are working for you at 1 pt and you are still losing weight, go with it. if not consider counting them at 2 pts each.

this is one of my fav muffins! I do get big pcs of the cereal in it sometimes I was thinking about whizzing the cereal in the food processor next time and seeing what that does..but very filling esp if I just need to use 1 flex pt etc..yummmmmmmmmmmmmmmmmmm xoxo Red

I just made these the other day and I love them - they are a staple at my house. I make them with all splenda and don't usually add the chocolate chips but I do use the dutch process cocoa to kick up the chocolate flavor. They are almost as good as the 1 pt vitamuffins (of course they are way more economical). They either make 12 very big muffins for me or 18 regular size muffins.
