Cinnamon Bran Muffins

2 c. Kelloggs All Bran Extra Fiber Cereal
1 1/2 c. skim milk
Combine and sozk for 15 min.
1 1/4 c. flour
1/4 c. sugar
4 tsp. baking powder
1 1/2 tsp cinnamon
2 egg whites
1/4 c. apple butter
1/4 c. golden raisins. Or craisins
Combine flour, sugar, b. powder, raisens, cinnamon in a large bowl and mix well. (I always fluff my flour and b. powder with a fork before I measure it)
Put two egg whites in a 1 cup measuring cup. Add enough apple butter to make 1/2 cup of the combined apple butter and whites. . Mix with a small whisk. Add to cereal and milk mixture after cereal has soaked in the milk. Sir.
Stir into flour mixture.
Coat 12 muffin pans (not small or jumbo just regular size) with Pam.
Spoon in batter.
Bake at 350 22 - 25 minutes. (until tooth pick comes out clean)
2 muffins = 3 points
This recipe was in Dotti's recipes at one time. Original used egg beaters but I prefer egg whites as I always defrost the beaters and they come out half cooked in the micro.
I wrap 2 muffins in plastic wrap and then put them in a zip lock bag and store in refrigerator. Place 2 unwrapped muffins on a saucer and warm in microwave for 1 minute on 50% POWER

I just saw that this recipe is still in Dotti's file of recipes. On the very first page on the left hand side Dotti has her list of links. Go down to recipes and this one is under breads and muffins.

Ii made thise today with Splenda instead of sugar. 1/4 c of Splenda for the 1/4 c or sugar. The volume of muffin was the same but not quite as sweet. A diabetic might find this helpful. The difference in the points for 12 muffins isn't that much considering the cost of the Splenda.

Do you know how much fiber these muffins have in them? My neice has high cholesteral and I'm trying to find foods and recipes that are high in fiber that she'll like to eat. Also, for my benefit, did the point value change when you did half splenda and half sugar? If you do it again, you might want to try to put more Splenda in. I've heard that even though you are supposed to measure the two the same, people have found they have to put more Splenda in.

The fiber in these muffins will come from the 2 cups of Kelloggs Extra Fiber Bran Cereal. 1/2 c of the bran cereal has 13 g of fiber, 0 g of sugar, 50 calories, and 1 g fat.
You can't do much better than that. I too had high chloresterol when I started WW in 1/99. I was taking 20 mg of Lipitor daily. Since I am down 69 pounds (at goal) the chlor is right where it should be and I only take 10 mg of Lipitor. I wish I could get off the Lipitor but it elevates some when I do.
Last week I made the Duncan Hines new Kelloggs Blueberry Bran Muffins with applebutter and egg white with skim milk. They are good but I much prefer the Cinnamon Bran Muffins. I bake a batch every 6 days and have for over a year. I have made them in the RV last summer when we traveled across country. I'm not concerned with the 1/4 c of sugar. I don't think that is going to make that much of a difference in the calories (1 Tabl. = 1 pt.) as I am not diabetic.

I just wanted to pull this recipe back up to the top because I just made it and I LOVE IT!!! I didn't even use the apple butter because I don't have any. I jsut substituted more milk for the apple butter. It was so good and so filling. Thank you very much for this recipe!

Anybody that needs their fiber these are very good. I refrigerate them and warm in microwave on medium (50%) power. Two for 1 minute.

I have taken a recipe for Pumpkin Bran Muffins off of W W web site and tried them. They were a little dry so I used the Cinnamon Bran Recipe and changed it a little bit.
Pumpking Bran Muffins
2 cups Kelloggs Extra Fiber All Bran Cereal or Fiber 1
1 1/4 cup f/f milk
3/4 cup of pumpkin (1/2 a can) not pie filling
2 tsp. pumpkin pie spice
1/4 cup of egg substitute ( or 1 egg)
1/4 cup Splenda brown sugar sub. packed in cup
1 1/4 cup flour
4 tsp. baking powder
Soak the cereal in the milk for 15 minutes
Add the dry ingredients in a large bowl.
Mix the pumpkin and egg in a cup and add to soaked cereal.
Mix the wet ingred. into the dry ingred.
Bake 350 degrees for 23 - 25 minutes. Makes 12 med. size muffins.
You can add 1/4 cup of raisens OR 1/4 cup of mini choc. chips with out changing the point count
94 calories with out raisens or mini chips 0.5g fat 4.7g fiber 105 calories with raisens
100 calories with mini choc. chips. 0.8g fat
