REFRIDGERATOR BRAN MUFFINS - DELICIOUS

These are great. You can make up the batch and leave in the fridge and bake fresh everyday if you want. I've asked twice at the meetings if they are really only 1 point and they assure me they are. Filling and really tasty and every person I've given them to seems to really enjoy them.

Enjoy!!

3 c. natural bran
2 c. All Bran Cereal (Don't use flakes)
1 c. All Bran Buds (expensive but 12 g fibre) or just use 3 c. All Bran

Soak in 2 c. boiling water for 10 minutes in a big bowl then add
4 c. buttermilk

In another big bowl mix:
1 c. applesauce
1/2 c. packed brown sugar
1/4 c. cooking molasses

Beat in:
2 egg + 2 egg whites (or 4 Tbs Eggbeaters)
Add bran mixture to creamed mixture stirring until mixed.

Mix together:
2 c. whole wheat flour
3 c. all purpose flour
5 tsp baking soda
1 tsp salt
2 c. raisins or 2 c. chopped dates
Add to bran mixture, stir till mixly evenly.
Fill PAM sprayed muffin cups quite full.
Bake at 375 for 20-25 minutes. Don't overbake or will be dryish. (Mine seem to be about 22 minutes)
Let cool 5 min after baking before getting them out of the pan.

Bake as many muffins as you like now and save the rest of mix in a sealed container in
fridge for up to 6 weeks.

Makes 36 muffins.

No fat, low calorie...high fibre. Counts as 1 point on WW program

These are really fabulous! I love having the batter in the fridge - don't even have to mess up a bowl to have fresh muffins. They're especially great with ICBINB spray and apple butter!

Update on muffins. I asked again at the meeting if they were really 1 point and was informed they are 2.5 points on the new system where fiber is cut off at 4 grams. But the leader said "Hey, if you're losing counting them as one then stick with it".

Thanks for the update, Keli - I'm going to assume that they are still 1pt on the old system, and, since that's how I lost my weight and that is how I'm maintaining my weight, that's how I count 'em! I really think these are great, and I love having the batter in the fridge to make up fresh muffins every few days!

Just wanted to let you know I made these too, and loved them. I was a little nervous about the 1 pt, so have been counting them as 2. I like muffins so much, at 1 pt I could probably eat the whole batch!

I just figured out how to use the Mastercook I got for Christmas and ran this recipe through it - came out with 142 calories, 1g fat, 5g fiber for each of the 36 muffins. This comes out to 2pts on either WW 1-2-3 or Winning Points.

Not a refrigerator bran muffin...but very quick and good. I took one box of Duncan Hines Kelloggs All-Bran Blueberry muffin mix, and added one can of libby's pumpkin and 1/2 cup egg beaters. The consistency is a little odd, and the tops are chunky looking....but they taste great. I drizzled a little honey over the top of each one. Next time I will smooth the batter off. Anyway, I come up with one point each, but two are three points on the Winning Points System. And it counts as a vegetable.

I served them hot with ICBINB Lite. With a cup of apple cinnamon tea? Very yummy.
