1 point muffins

Here's a recipe for 1 point muffins -- my DH and 4 sons liked them!
ONE POINT Pumpkin Bran muffins
1 1/2 c. WW flour
1 7/8 cup wheat bran
1 T. baking soda
2 T. sugar
1 tsp cinnamon
1/4 c. brown sugar
1 1/2 eggs plus 1 egg white (you can use egg substitute)
2 cups pumpkin
3/4 cup juice (apple, pineapple, orange)
1 tsp vanilla
1/4 cup "I Can't believe it's not butter light", melted
1 cup sour skim milk
1/3 cup raisins or chopped dates
Mix dry ingredients. In another bowl, mix rest of ingredients (except raisins/dates) and add to dry ingredients.
Mix and add raisins or dates and mix till combined.
Pour into lined or sprayed muffin tins and bake at 375 for 15-20 minutes. Makes 24 muffins
Each muffin: 81 cal, 1.6g fat, 1.8g fiber = 1 point each
