Pipover (mini-popovers)
¾ c. low-fat buttermilk
2 eggs
¾ c. all-purpose flour, sifted
1 T. reduce-calorie margarine
Pinch salt
Preheat the oven to 375 degrees. Spray a 12-cup mini-muffin pan with nonstick cooking spray. Place the buttermilk and eggs in a blender and blend on medium-low speed. With the blender running, carefully add the flour, margarine, and salt. Blend until thoroughly combined, 1-2 minutes. Heat the muffin pan in the oven just until the cooking spray begins to smoke slightly, about 1½ minutes. Remove the pan from the oven and carefully spoon the batter into the cups, filling each just to the rim. Return the pan to the oven and bake until the popovers are puffed and golden brown, 25-30 minutes.
Makes 6 servings, 2 points per serving.
