two point pumpkin muffins
--------------------------------------------------------------------------------
Fat-Free Pumpkin Muffins (2 points each)
(This made 24 muffins)
1 15-oz can pumpkin
1 2/3 cup unsweetened applesauce
1 cup sugar
1 cup eggbeaters
1 teas vanilla
3 1/3 cup flour
2 teas baking soda
1/2 teas baking powder
1 1/2 teas salt
1 Tabl cinnamon (I used more)
1 Tabl nutmeg
1 teas ground cloves
Preheat oven to 350. Beat the eggbeaters, vanilla and the sugar. Mix in the pumpkin and applesauce. Sift the flour with the other dry ingredients and gradually add to the pumpkin mix. Mix all together and pour into well-sprayed (Pam) muffin tins. Bake at 350 for about 25 mins.
Enjoy!
Chris

These look great - I'm going to make them this morning!
Just ran the recipe through Mastercook, though, to see what the difference would be if I used Splenda for some of the sugar, and found out that, as posted, the recipe is 112 calories, 0 fat, 1g fiber - which is 2 points per muffin. If you substitute 1/2C Splenda for 1/2 of the sugar, each muffin is 99 cal, 0 fat, 1g fiber - still 2 points.
Thanks for posting this recipe!

Far be it from me to argue with Mastercook, but I used the WW points info, my point calculator and the actual lables from each ingredient and was very careful when adding this up. They were one point each, HONEST!

Cin, you could substitute egg whites for egg beaters. 1 cup of eggwhites = 122 calories, no fat
Sorry, but if this recipe makes 24, they would have to be 2 points because of the countable ingredients.
1 c. sugar=15pts
1 2/3 c applesauce = 2
1 c. eggbeaters=4
3 1/3 c. flour = 26
total=47 points
But they look good, Chris, thanks for posting them.

OK, I changed the title to 2 points instead of one. I can't imagine how I miscalculated, but I guess somehow I did. I just got really cute Halloween cupcake papers at the store and I'm going to make another batch using them. These are really good, if I do say so myself!
Hugs,
Chris
